This is the most common type of symbol found for varistors in schematic diagrams.

An example circuit with a varistor is shown below:
You can see the varistor is in parallel to the circuit to the right. Since a varistor's task to clamp excess voltage
down to ground, it is put in parallel to electronic circuitry which we want to protect.
